Mexican Food Made Simple - Episode 4

I had the pleasure of cooking with Abigail Mendoza, a cook as famous in New York and California amongst the foodie press, as in Mexico City. She lives in Oaxaca state in a town called Teotitlan del Valle and cooks pre-hispanic food with no help from any mechanical gadgets. All her recipes are made from scratch with corn and chillies ground on volcanic stone called metates and spices and herbs ground in the huge pestle and mortars, the molcajetes. Abigail is about half my height and has the naughtiest twinkle in her eye. Cooking with her was a real privilege as people come from all over the world to visit her. She is great fun and tells me much gossip about the surrounding area!

 
Back in Mexico City I get my first taste of Mexican wrestling. I couldn’t believe it had taken me this long to get to a match but rather than being the macho, violent sport I had supposed, it was the campest, funniest thing I had ever seen. Huge, beefy men playing around and prancing around the ring; terrifying looking women too and a collection of the most hysterical dwarves I have ever seen, running rings around their taller, meatier competition. The whole event was so tongue in cheek, hysterically funny and with the wrestlers doing some amazing acrobatic feats. I loved every minute of it, especially meeting some of the wrestlers backstage afterwards. One had slicked back tendrils of curly hair and seemed to be on something slightly stronger than the lemonade that I was drinking. Both had bigger muscles than the Incredible Hulk. A brilliantly funny night, we ate tortas galore and wept with laughter at the antics going on.
 
Tortas are massive sandwiches filled with refried beans, avocado, hot salsas and all sort of other things. What would you put in yours?!
