Wahaca Butchery Day

We butchered an entire pig!!  The guys set to work on a number of different dishes with different cuts of pork, and other meat that the butcher brought with him.  We made mexican Pozole, pig's head drowned tortas (the infamous mexican 'tortas ahogadas'), chicken liver tacos, homemade sausages with Mark my business partner's sausage maker, and beef cheeks cooked in red mole.  Other cuts of pork were slow cooked throughout the day with a mixture of herbs and spices.  What a day - so much fun had by all!
