1 large cucumber
1 shallot, finely chopped
2tbsp sherry vinegar
2tsp brown sugar
1 tbsp chopped mint
Salt and pepper
1. Very, very thinly slice the cucumber.
2. Put the cucumber, shallot, sugar and vinegar in a bowl. Season with salt and pepper. Leave to marinate for 2 hours.
3. Arrange the cucumber on a plate in lines or decreasing circles. This is also delicious with cider vinegar and chopped dill, for a totally different flavour - try it with barbequed sausages.
