Chipotle and Apricot Sausage Rolls

Makes 25-30 sausage rolls


Ingredients

350g sausagemeat

1 tbsp chipotle in adobo

7 dried apricots, finely chopped

1 tbsp thyme leaves

1 egg, beaten

1 x 320g pre-rolled puff pastry

100g crème fraîche

5g sesame seeds

 

Recipe

Preheat your oven to 220C/200C fan/gas 7.

Place the sausagemeat, chipotle, apricots and thyme in a bowl and combine with your hands.

Unroll your pastry onto a lightly floured surface. With a rolling pin, roll the pastry out a little thinner (maintaining the same rectangular shape) till it is about the thickness of a 2p coin. Cut lengthwise into 3 strips.

Divide your meat mixture into 3 x 150g ish balls, then spread along the length of each pastry strip in a long sausage shape.

Brush the edge of each strip with beaten egg, then fold each roll over tightly. Seal with the prongs of a fork.

Cut into 4cm - 5cm lengths. Brush each roll with more beaten egg and sprinkle with sesame seeds.

Place your rolls on a greased baking tray and bake for 20-25 minutes until crisp and golden.
