Mango and Strawberry Salad

This is a really easy pudding and the richness of the mangoes and the touch of tequila makes it sophisticated enough to impress any dinner guests.


Ingredients

3 ripe mangoes (the Pakistani honey mangoes are delicious)

a large punnet of strawberries

1-2 tablespoons unrefined caster sugar

juice of 1 lime

a few generous splashes of tequila

a large handful of mint leaves, roughly chopped

 

Recipe

Peel the mangoes, remove the stones and cut the flesh into rough chunks into a salad bowl. Hull the strawberries and cut in half or in thirds if they are very large, adding to the mangoes as you go.

Sprinkle over the sugar, the lime juice and tequila and let sit for at least 10 minutes in the fridge or as long as you want before serving. Bring out before serving to allow the salad to get to room temperature and scatter over the mint leaves.

This looks very pretty served in glass pudding bowls or tumblers.

Tip

Good tequila is delicious in food. Try to get hold of some reposado tequila, which has been rested in barrels for at least 6 months and has a much gentler flavour than younger tequilas.
