Spinach and Feta Filo Cigars
 

Makes 14 cigars


Ingredients

200g fresh spinach

2 tbsp chopped dill

2 tbsp chopped parsley

1 egg, beaten

Zest of 1/2 lemon

120g feta, crumbled

4 spring onions, finely chopped

7 sheets of filo pastry

60g butter, melted

 

Recipe

Preheat your oven to 180C/fan 160/gas 4. Place the spinach and half a teaspoon of salt in a dry saucepan, cover and cook for 2 minutes until wilted. Alternatively, place in a microwave-proof bowl and cook for 1 minute till wilted. Remove and set aside to cool.

Squeeze out any excess liquid from the spinach and finely chop. Place in a bowl with the herbs, egg, lemon, feta and spring onions and mix to combine. Season to taste.

Line a baking tray with greaseproof paper. To make the cigars, cut each sheet in half across the middle to make 14 squares. Place a square of filo on your work surface. Brush lightly with butter and spoon a tablespoon of the mixture along one side of the pastry sheet. Spread into the shape of a small sausage, then fold in the sides. Brush with more butter and roll into a cigar shape. Place the cigars on your baking tray and repeat with the remaining mixture.

Brush the cigars with a little more butter then bake in your oven for 15-20 minutes until golden and crispy.

Leave to cool for a moment before eating.
