Lunch and Dinner Dips

August is a funny month, a part of the year when time seems to slow down, when weekend park meet-ups turn into long lunches and impromptu cups of tea stretch into evening drinks with a mix and match supper. A glass of wine, a bread basket and a few dips: these kinds of meals make me happy.

Here are three recipes to carry you through such occasions: a roast carrot hummus, a pea, mint & feta dip and my take on a green goddess. They are fast and fuss-free, destined to be passed around and shared. Spread them onto fresh bread and serve alongside a tumble of crisps, good olives and crunchy veg sticks.

One balmy evening, I heaped roasted aubergines, carrots and sautéed courgettes over the carrot hummus and sprinkled the lot with toasted nuts, crumbled feta and fresh mint. Now that was a good supper.
